More than 20 years of experience

Wilson Rodriguez ( Riobamba Ecuador ), the youngest son of two business-savvy parents. Naturally, Wilson found great success in the restaurant business, starting with El Chacarero restaurant in Ecuador in the early '80s. His success brought him to the United States and after many years of apprenticeships in restaurants such as Hacienda Don Emilio as well as La Strada in Greenwich CT, He made a new life in Stamford, CT. The opening of his first restaurant in the united states, named Costa Brava on New Caanan Ave was just the beginning of his business success in Connecticut. Macarena in Stamford, followed by Cafe Madrid found their fame in recreating traditional Hispanic culture within a city that craved authenticity. Once again, this time with over 20 years of experience he partnered Jose Draganac as Main Chef, both welcome the challenge of recreating the unique and wildly beautiful Peruvian Cuisine, here in New Canaan with their new restaurant, Pesca Peruvian Bistro.

Jose Growing up was in contact with many beautiful ingredients from three different Peruvian geographical zones. Costa , Sierra Selva also having The Pacific Ocean as his backyard made easier to create numberless of amazing dishes  

He began cooking at an early age and honed his skills, first at culinary school in Lima, studying under fellow countryman and celebrated chef Gastón Acurio, then working for 15 years at home and in the United States, most recently with the Z Hospitality, a group of area restaurants that includes Solé, Mediterraneo and Terra.

There, he connected restaurateur Wilson Rodriguez—part of a group that had opened Costa Brava in Norwalk and Macarena Tapas in Stamford—and the pair decided to realize a shared vision in opening Draganac’s own place.

Jose Draganac ( Lima - Peru),  began his culinary career studying at the San Ignacio de Loyola Culinary Institute in Lima Peru. Jose then studies with the renowned Peruvian chef Gaston Acurio, then worked at the Rafael Restaurant Lima-Peru before embarking on pursuing his dream of becoming Chef in the United States. He moved to Stamford CT and spent a few years with Z Hospitality Group which owns the noted Restaurants Terra, Greenwich CT, Mediterraneo Greenwich CT, and Sole New Canaan CT. Jose then went on to broaden his experience and relocated to Atlantic City to become an Executive Sous Chef Fornetello ( Borgatta Hotel & Casino ) for its fine dining. After many years of honing his culinary skills, Jose is embarking on opening his first Restaurant called Pesca Peruvian Bistro in New Canaan CT, with Wilson Rodriguez as a partner. Jose will now incorporate his broad knowledge of European Style Cuisine, with his unique blend of Peruvian & Latin American flare and seafood specialties. Pesca Peruvian Bistro will be a unique addition to the New Canaan Downtown area with the mastery of Jose's use of spices and flavors from South America.
